Difference between Iberian acorn and bait

In order to correctly differentiate an Iberian ham from an acorn ham from a bait there will be certain characteristics in which we should look. With the wisdom that experience grants, and the means that mother nature gave, hams were salted, dried and aged for three and even four long years.

Back in 1880, the business started in Cumbres Mayores, and it was in 1890, when Dionisio Castaño Fernández (great-grandfather) decided to open a warehouse in Huelva capital and expand the commercialization of Iberian pork products and introduce others. The children of Dionysus also join the family tradition. The generational incorporations supposed a great qualitative jump in the development of the company. And it was in the mid-50s that the business began to expand in Huelva and bordering provinces. In 1973 the business began to undergo an important transformation with which they consolidated and expanded production and activities (including livestock).

Today, Hermanos Castaño Fernández S.A. possesses one of the most modern installations of the sector in the province. Brothers and nephews continue the work carried out by their elders in the management of the family business, getting day by day to be pioneers and a leader in their sector.
