The Iberian morcón Tartessos is produced in the Huelva town of Cumbres Mayores in the heart of the Sierra de Aracena and neighboring to Jabugo. For its elaboration, Tartessos makes use of noble meats of Iberian pig fed with acorn of acorn and cork oak in regime of montanera. The Iberian morcón of Tartessos acorn fed, is composed of Iberian pork, sugars, dextrose, paprika, emulsifier, salt, natural antioxidant, preservative, spices and garlic. After chopping and mixing all its ingredients, the iberian morcón goes through a healing period of 3 months in natural dryers in the province of Huelva. At the time of pairing this artisan sausage, nothing better than young fruity wines tempranillo grape Rioja, Navarra or Ribera de Duero. Unlike the chorizo, the Iberian morcón presents larger pieces of lean, in addition to a smaller proportion of fats.
