Difference between ham and palette

The difference between ham and shoulder lies in the area of ​​the pig from which each piece is extracted. While the ham is obtained from the hind legs, the 100% acorn-fed shoulder is obtained from the front legs. The manufacturing process, on the other hand, is the same in both pieces. The Joselito palette harmonizes perfectly with dry white wines from Jerez such as manzanilla or fino. For its correct conservation, we recommend that you cover the cut of the shoulder either with the rind of the piece itself or with a transparent film.

Pig properties

The main difference between the Iberian pig and the common white meat pig is that the Iberian breeds extensively in which the animal grazes freely in fields and pastures and feeds on acorns and other herbs combined with feed. For its part, the white pig is raised without exercise and its diet is based fundamentally on feed.

As a consequence of these differences in the type of breeding of the animal, the result in the meat is also notably uneven. The Iberian pig manages to have a pinker meat with streaks of fat between the muscle fibers that give it greater juiciness, tenderness and flavor.
