The longaniza  payés Casa Riera, is handcrafted in the Catalan town of Sant Feliu Sasserra, within the Bages region. In its production, only high quality meats are used, including pork shoulder and pork belly, sea salt, black pepper and natural casing. These meats are crushed to be then stuffed and pass through a period of drying from one month to two months, depending on the thickness of the sausage and the weather. Casa Riera’s sausage de payes is a product suitable for consumption by celiac and those who are allergic to dairy products. It is a product that makes an excellent pairing with white wines such as Riesling, verdejo or chamomile, as well as rosé grapes of garnacha or merlot. Cavas and champagnes also maridan pleasantly. Casa Riera longaniza de payes can be accompanied by an onion confit, a fruit chutney or various pickles such as pickles, olives or chives.
