It is a Gran Reserva cheese with a cure of 10 months, characteristic that gives it an intense flavor and a subtle final itch. Roncal cheese is distinguished by its yellowish-white color, a hard and moldy rind and a compact interior with small holes of its name. To taste this sheep cheese, we recommend cutting it in fine triangles and accompanying it with a red wine with or without aging.
