Salted anchovies La Lata de Braulio are the best way to taste the anchovies of Santoña to the taste of the consumer. La Lata de Braulio makes use of anchovies caught in the Cantabrian Sea during the summer. Salted anchovies are packaged fresh by layers or layers. On this occasion, we find a can of 10 kilos of 30 to 31 layers and 9 fish per litter, which would come to equal between 540 and 558 fillets
The anchovies in salted are prepared to be able to file by hand and to taste with a dash of extra virgin olive oil and Modena vinegar. Once opened, the salted anchovies should be covered with brine for their perfect preservation.
