The smoked Idiazabal cheese is produced by Vascolac, family company dedicated to elaborate cheese for more than 30 years. The smoked Idiazabal cheese Bizkor has an ageing period of 2 months at least, during that period the cheese maker watches the cheese to guarantee its quality. The Idiazabal cheese Bizkor has been awarded with the silver medal in the World Cheese Awards.
