Pork Loin head or coppa Cárnicas Diaz, is an artisan sausage elaborated with head of white pork loin, salt, paprika and sugar. It is a piece of pork that is placed between the back and neck and characterized by its central vein, a peculiarity that gives it a great juiciness and a pleasant texture. Cárnicas Díaz produces its sausages in a traditional way in the Zamorano town of Morales del Vino. For the elaboration of its sausages, Cárnicas Diaz only makes use of noble meats, spices and selected ingredients without the use of lactose, gluten or any kind of allergen among its ingredients. The naturalness of their production processes has led them to achieve the quality seal of Food Artisans of Castilla y León. Pork Loin head makes a delicious pairing with young red Garnacha grapes, white fermented in barrel, as well as rosy wines with a generous body.
