Txakoli Uydi Vendimia Tardia is a sweet txakoli made from hondarrabi zuri grapes collected during the end of October in the Basque town of Getaria, it is a wine in which the grapes are picked late, the result is a slightly passionate grape that gives us sweet wines and very little production. This sweet varietal txakoli is aged for 12 months. It is a wine in which its sweetness contrasts with its subtle acidity. This txakoli belongs to the protected designation of origin Getariako txakolina, being Txomin Etxaniz the first winery of the denomination of origin.
The txakoli Uydi Late harvest we must taste it at a temperature of between 6 ° and 9 ° C. This sweet wine can be paired with dishes and terrines of foie gras of duck or goose. In the same way, he is an excellent companion of blue cheeses; like the Picón, Cabrales, Gorgonzola or Roquefort. Also, it is outstanding to taste with starters and desserts. Unlike other txakolis, this late harvest we can taste it in the next 7 or 8 years, provided we keep it in dark and cool place, away from sunlight and with the bottle placed horizontally, and may even grow in the course of the years its quality in bottle. This delicious txakoli with the protected designation of origin Getariako Txakolina has been classified by the prestigious wine guide of Robert Parker’s Wine advocate, obtaining the score of 88 points in the edition of 2014.
