Dehesa de Extremadura


The Iberian ham under the certificate of origin Dehesa de Extremadura is one of the most valued Iberian hams by gastronomical experts all over the world. Dehesa makes reference to the landscape where the farmers use to go across in south west of Spain. Iberian ham under the certificate of origin Dehesa de Extremadura is made with pure Iberian pig or with a crossbreed superior than 75 %.

The ecosystem of Extremadura has more than a million hectares of Dehesa, and it is one of the best well maintained landscapes in Europe. The regions where the pigs are reared are concentrated with holm oak and cork oak in Caceres and Badajoz provinces. Elaboration and maturation areas are located in Sierras del Suroeste of Badajoz, Ibor-Villuercas, Cáceres-Gredos south, Sierra de Montanchez and Sierra San Pedro.
