Sherry vinager

The vinegars of the Vinagre de Jerez appellation of origin are made from the acetic fermentation of Sherry wines. The sherry vinegars have some peculiar characteristics that differ from the rest as their dark color, their notes on the nose to wood and their certain concentration. Within this denomination, we can find vinegars from Jerez Reserva with a minimum aging period of two years although sometimes this period can also be extended until reaching 20 or 30 years of aging.
